Bacon Bites
Immense flavour and fun to eat. This recipe makes one portion and you can replace the bacon and chicken with Quorn equivalents. You must serve your portion of vegetables or salad with this, and they are GREAT cold!

Ingredients
- 150 g Lean Chicken Breast
- 2 Slices Thin Sliced Bacon (12 in a pack)
- 1 Teaspoon Garlic Puree
- 1 Teaspoon Mustard
- 1 Teaspoon Honey
- 1 Teaspoon Light Soy Sauce
- 1 Teaspoon Mixed Herbs
Instructions
- Preheat your oven to 180°C.
- Cut your chicken breast into 6 even sized chunks. Place into a bowl with the mustard, garlic puree, mixed herbs and some salt and pepper.
- Mix thoroughly and set to one side.
- In a separate bowl mix the honey and soy sauce together and set to one side.
- Now cut each slice of bacon into 3 as per the image.
- Within each piece of bacon, place a chicken piece and wrap in the bacon.
- Continue for all 6 pieces of chicken and place onto a baking tray or ovenproof dish. Use half of the honey/soy mixture to cover each one.
- Place into the oven, uncovered and bake for 15 minutes. At the fifteen minute mark remove from the oven, use the remaining honey/soy mix to coat the pieces and return to the oven for a final 15 minutes. If using Quorn reduce these cooking times to 10 minutes each.
- Serve with your vegetable or salad portion and enjoy!
