Baked Eggs and Bacon

Ridiculously simple to make but sometimes you just need to be given the 'idea'. This recipe makes ONE portion, serve with some mayo and you are winning at life!

Equipment

  • 1 Oven or Airfryer

Ingredients

  • 1 Large Red Bell Pepper
  • 2 Eggs
  • 20 g Cheese Extra Mature is best
  • 4 Rashers Streaky Bacon smoked or unsmoked

Instructions

  • If using an oven, set to 200°C. If you are going to use your air fryer, then don't!
  • Cut your bell pepper in half, remove the seeds but leave the stalk in place. Spray both sides with some spray oil and place in either an ovenproof dish or your air fryer drawer. Michelle has used parchment here but that is not essential.
    Crack an egg into each and season with salt and pepper.
  • OVEN: Pop your grated cheese on top between the two pepper halves and lay your bacon next to the peppers and bake in the oven for 20 minutes
    AIR FRYER: Cook the peppers at 165° for 10 minutes, THEN add your cheese AND bacon into the drawer and cook for a further 5 minutes.
    Remove your peppers and if the bacon needs cooking further cook for an extra 3-4 minutes on MAX CRISP (around 240°
